Servings up to 4 as a starter, or 2 if it's dinner.
One bunch of Rocket leaves (also known as Rocka or Arugula), 4 calories per cup
8 fresh mushrooms
1 big ripe avocados (Ripe avocados will peel easily and are soft, yet still firm and not squishy.)
100g of goat cheese
1 full tbsp of Grain mustard
4 tbsp Olive oil
One pinch of Thyme
Cookware and Cutlery:
A sharp knife
A deep square dish
How to Prepare:
Wash and Cut: Wash the Rocket leaves and dry delicately. Wipe, peel, and slice thinly the fresh mushrooms, but do not soak into water because they absorb water like a sponge. Peel the 2 avocados and cut in cubes. Cut the goat cheese into small-to-tiny cubes, making it resemble to crumbles.
The Seasoning: Squeeze the juice of one lemon; add 4 tablespoons of olive oil, one full tablespoon of grain mustard, and a pinch of thyme. Mix well.
And Finally: Lay the rocket leaves in the dish. Add on the avocados and the mushrooms. Pour the sauce over and then sprinkle the top with goat cheese.
